
Zucchini Corn Fritters

Ingredients
- 1 cup all-purpose flour
- 1-1/2 teaspoons salt
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 2 large eggs, room temperature
- 1/2 cup 2% milk
- 1 teaspoon canola oil
- 2 cups shredded zucchini
- 1 cup fresh or frozen corn
- 1/4 cup shredded Parmesan cheese
- 2 tablespoons chopped green onions
- Oil for frying
Directions
- In a large bowl, combine flour, salt, baking powder and garlic powder. In a separate bowl, whisk together eggs, milk and oil; stir into dry ingredients just until moistened. Fold in zucchini, corn, Parmesan and green onion.
- In a large cast-iron or other heavy skillet, heat 1/4-in. frying oil over medium heat. Working in batches, drop batter by 2 tablespoonfuls into hot oil. Fry until golden brown, 1-2 minutes on each side, carefully turning once. Drain on paper towels. Serve hot.
