Toasted Pecan Vinaigrette

Ingredients

  • 1/4 cup red wine vinegar
  • 1 shallot, finely chopped
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 3/4 cup extra virgin olive oil
  • 1/3 cup finely chopped pecans, toasted

Directions

  1. In a large bowl, whisk together first 5 ingredients. Slowly add olive oil while whisking constantly. Stir in pecans just before serving.
