Sweet potatoes are among my favorite vegetables, and this sweet potato pone is my absolute favorite way to prepare them. Not only is it an eagerly anticipated side dish for Thanksgiving dinner with family and friends each year, but also I make it to dress up ordinary meals. Ingredients
- 2-1/2 pounds large sweet potatoes (about 4 large), peeled and shredded
- 1/2 cup sugar
- 1/2 cup light corn syrup
- 1/2 cup butter, melted
- 1 tablespoon grated orange zest
- 3/4 cup all-purpose flour
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
Directions
- Preheat oven to 350°. Grease a 13x9-in. baking dish; set aside. In a large bowl, combine sweet potatoes, sugar, corn syrup, butter and orange zest. In another bowl, combine flour, nutmeg and cinnamon. Add to sweet potato mixture; mix well. Transfer to prepared baking dish. Bake until sweet potatoes are bubbly and golden brown, 55-60 minutes. Let stand 10 minutes before serving.
