Smoked Gouda Mac and Cheese

Elevate your typical mac and cheese with this smoked gouda mac and cheese recipe. Made with three types of cheeses, a creamy milk roux and plenty of spices for added flavor, this recipe is a total winner.

Ingredients

  • 1 pound uncooked elbow macaroni
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1-1/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon paprika
  • 1-1/2 cups shredded smoked Gouda cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons minced fresh parsley, optional

Directions

  1. Preheat oven to 400°. Cook macaroni according to package directions. Drain; set aside.
  2. In a large sauce pot, melt butter over medium heat. Stir in flour; cook lightly browned, whisking constantly. Gradually add milk, salt, pepper, garlic powder, mustard and paprika. Bring to a simmer; cook until thickened, 3-4 minutes, whisking occasionally. Add gouda and cheddar cheeses until cheese has melted; stir in cooked macaroni.
  3. Transfer mixture to a greased 13x9-in. baking dish. Sprinkle with Parmesan. Bake until cheese is bubbly and edges are golden brown, 35-40 minutes. If desired, top with parsley.
