Ingredients
- 1/2 medium zucchini, halved lengthwise and cut into 1/4-in. slices
- 1 cup fresh sliced Brussels sprouts
- 1 shallot, sliced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1 large sweet yellow pepper, cut into 4 rings
- 4 large eggs
- 1/4 cup shredded Parmesan cheese
Directions
- Preheat oven to 350°. Place first 5 ingredients in a large bowl. Drizzle with oil; toss to coat. Place pepper rings on a baking sheet. Arrange vegetable mixture around peppers. Bake for 12 minutes.
- Break and slip an egg into center of each pepper ring; sprinkle with Parmesan. Bake until whites are set and yolks begin to thicken, 8-10 minutes.
