Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 large egg, room temperature
- 1 cup mashed sweet potato
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground allspice
- 1 cup chopped pecans
- 1 cup raisins
Directions
- Preheat oven to 375°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg, sweet potato and vanilla. Combine the flour, baking powder, cinnamon, baking soda, salt and allspice; gradually add to creamed mixture and mix well. Fold in pecans and raisins.
- Drop by tablespoonfuls 1 in. apart onto ungreased baking sheets. Bake until edges begin to brown, 10-12 minutes. Cool 1 minute before removing to wire racks to cool completely. Store in an airtight container.
