Pina Colada Fluff

This pina colada fluff recipe is from one of my grandma's vintage cookbooks. Instead of alcoholic rum, you could use rum extract. —Crystal Jo Bruns, Iliff, Colorado

Ingredients

  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 teaspoon coconut rum or rum extract
  • 2 cups miniature marshmallows
  • 1 cup sweetened shredded coconut, toasted
  • 1/2 cup finely chopped pistachios, toasted
  • 1 carton (8 ounces) frozen whipped topping, thawed

Directions

  1. In a large bowl, combine pineapple, pudding mix and rum. Add marshmallows, coconut and pistachios. Fold in whipped topping. Chill until serving.
