Peanut Butter Banana Bread

Ingredients

  • 1/2 cup vegetable oil
  • 3/4 cup creamy peanut butter
  • 1 cup sugar
  • 2 large eggs
  • 1-1/2 cups mashed ripe banana (3 medium banana)
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Directions

  1. Preheat oven to 350°. In a large bowl, cream the oil, peanut butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas. Combine the flour, salt and baking soda; stir into creamed mixture.
  2. Transfer to two greased 8x4-in. loaf pans. Bake until toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes before removing from pans to a wire rack to cool completely.
