When you have fresh, juicy summer produce, you want to let it shine. This refreshing peach Caprese salad made with beautiful peaches, tomatoes, mozzarella and basil is the ultimate seasonal side.

Ingredients

  • 1 large heirloom tomato, sliced
  • 2 medium peaches, cut into 1/2-inch pieces
  • 8 fresh basil leaves
  • 1 package (8 ounces) fresh mozzarella cheese
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Sea salt, to taste
  • Coarsely ground pepper, to taste

Directions

  1. Layer sliced peaches, tomatoes, mozzarella cheese and basil leaves on a platter. Drizzle with olive oil and balsamic vinegar. Sprinkle with flaky sea salt and freshly cracked black pepper.
