Macaroni Salad

This simple yet satisfying dish is a popular item to bring to potlucks or any other fun gathering. You simply can't go wrong with a tangy and refreshing macaroni salad.

Ingredients

  • 1 package (16 ounces) elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 tablespoon sugar
  • 2 teaspoons yellow mustard
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 medium sweet red pepper, chopped
  • 1/2 cup finely chopped red onion
  • 1 celery rib, finely chopped
  • 2 hard-boiled large eggs, chopped

Directions

  1. Cook macaroni according to package directions. Drain; rinse with cold water and drain again.
  2. In a small bowl, mix mayonnaise, vinegar, sugar, mustard, salt and pepper until blended. In a large bowl, combine macaroni, sweet red pepper, onion, celery and eggs. Add dressing; toss gently to coat. Cover and refrigerate at least 1 hour before serving.
