Ingredients
- 3 tablespoons minced fresh parsley
- 2 tablespoons lemon juice
- 1 tablespoon grated lemon zest
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 cod fillets (6 ounces each)
- 2 green onions, chopped
Directions
- Preheat oven to 400°. In a small bowl, mix the first 7 ingredients. Place cod in an ungreased 11x7-in. baking dish; top with parsley mixture. Sprinkle with green onions. Bake, covered, until fish flakes easily with a fork, 10-15 minutes.
