Korean Short Ribs

Korean short ribs (aka galbi or kalbi) have a complex flavor with sweet, salty, fruity and umami notes. Add in smokiness from the grill and a delightful caramelized crust, and these marinated beef short ribs tick all the boxes.

Ingredients

  • 1/2 cup soy sauce
  • 1/3 cup packed brown sugar
  • 1/4 cup mirin (sweet rice wine)
  • 2 teaspoons sesame oil
  • 1/2 teaspoon pepper
  • 1 Asian pear, peeled, cored and quartered
  • 1 medium onion, quartered
  • 8 garlic cloves
  • 1-inch piece fresh gingerroot
  • 3 pounds bone-in beef short ribs, cut flanken-style
  • Sesame seeds and sliced green onions

Directions

  1. In a 13x9-in. dish, combine the first 5 ingredients. Place pear, onion, garlic and ginger in a blender; process until smooth. Whisk into soy sauce mixture. Add ribs; turn to coat. Cover and refrigerate 4 hours.
  2. Drain and discard marinade. Grill ribs, covered, over medium heat 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Garnish with sesame seeds and green onions.
