This easy Key lime bread is a sweet and tangy twist on classic quick bread. The glazed loaf is perfect for breakfast, dessert or a midday snack.
Ingredients
- 2/3 cup butter, softened
- 2 cups sugar
- 4 large eggs, room temperature
- 2 tablespoons grated lime zest
- 2 tablespoons Key lime juice
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup 2% milk
- 1 cup chopped walnuts
- GLAZE:
- 2/3 cup confectioners' sugar
- 1 to 2 tablespoons Key lime juice
Directions
- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Beat in lime zest, juice and vanilla. Combine flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Fold in walnuts.
- Transfer to 2 greased 9x5-in. loaf pans. Bake 50-55 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks.
- Combine confectioners' sugar and enough lime juice to reach desired consistency; drizzle over warm bread. Cool completely.
