This kale Caesar salad recipe—hearty, fresh, creamy and bright—is filled with crunchy salad greens, freshly shaved Parmesan, croutons and a homemade Caesar dressing.
Ingredients
- 4 cups chopped fresh kale
- 4 cups torn romaine
- 1 cup Caesar salad croutons
- 1/2 cup shredded Parmesan cheese
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 2 teaspoons Dijon mustard
- 2 teaspoons anchovy paste
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a large salad bowl, toss kale, romaine, croutons and cheese. For dressing, combine remaining ingredients in a small bowl. Pour over salad; toss to coat. Serve immediately.
