Make these Italian green beans when you want an easy side dish that's crispy and savory. It's made on the stovetop in just a few minutes and leftovers store well.
Ingredients
- 1-1/2 pounds fresh green beans, trimmed
- 3 tablespoons olive oil, divided
- 1/4 cup Italian-style panko bread crumbs
- 3 garlic cloves, minced
- 3/4 teaspoon salt, divided
- 1/2 teaspoon pepper, divided
- 1/4 cup grated Parmesan cheese
- 1 to 2 tablespoons minced fresh parsley
Directions
- Place steamer basket in a large saucepan or Dutch oven filled with 1 in. of water; add beans. Bring to a boil; cover and steam until crisp tender, about 7-8 minutes.
- Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add breadcrumbs, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper; cook until breadcrumbs are browned,1-2 minutes, stirring constantly. Transfer to a plate; sprinkle with Parmesan.
- Add remaining 1 tablespoon olive oil to the skillet. Add green beans; cook until lightly charred, 2-3 minutes. Add remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Top with reserved breadcrumb mixture, sprinkle with parsley.
