Italian Green Beans

Make these Italian green beans when you want an easy side dish that's crispy and savory. It's made on the stovetop in just a few minutes and leftovers store well.

Ingredients

  • 1-1/2 pounds fresh green beans, trimmed
  • 3 tablespoons olive oil, divided
  • 1/4 cup Italian-style panko bread crumbs
  • 3 garlic cloves, minced
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon pepper, divided
  • 1/4 cup grated Parmesan cheese
  • 1 to 2 tablespoons minced fresh parsley

Directions

  1. Place steamer basket in a large saucepan or Dutch oven filled with 1 in. of water; add beans. Bring to a boil; cover and steam until crisp tender, about 7-8 minutes.
  2. Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add breadcrumbs, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper; cook until breadcrumbs are browned,1-2 minutes, stirring constantly. Transfer to a plate; sprinkle with Parmesan.
  3. Add remaining 1 tablespoon olive oil to the skillet. Add green beans; cook until lightly charred, 2-3 minutes. Add remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Top with reserved breadcrumb mixture, sprinkle with parsley.
