Got leftover ham on hand? With everyday ingredients and a quick cook time, this hearty ham and potato soup recipe is just what you need.
Ingredients
- 4 cups chicken broth
- 3-1/2 cups cubed peeled potatoes
- 3/4 cup cubed fully cooked ham
- 1/3 cup finely chopped onion
- 1/3 cup finely chopped celery
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 5 tablespoons butter, cubed
- 1/3 cup all-purpose flour
- 2 cups 2% milk
- Minced fresh parsley, optional
Directions
- In a large saucepan, combine broth, potatoes, ham, onion, celery, salt and pepper over medium-high heat. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 10-15 minutes.
- Meanwhile, in a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir into potato mixture. If desired, garnish with parsley before serving.
