Fried Cabbage and Potatoes

Ingredients

  • 2 tablespoons butter
  • 2 medium potatoes, peeled
  • 1 medium onion, chopped
  • 6 cups coarsely chopped cabbage
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Cut potatoes in half lengthwise. Cut widthwise into 1/8-inch slices. In a large skillet, heat butter over medium heat. Add potatoes and onion; cook and stir until potatoes are tender, 10-12 minutes. Remove to a bowl and keep warm.
  2. In the same skillet, add cabbage and broth. Bring to a boil. Reduce heat; cover and simmer until cabbage is tender 8-10 minutes. Remove lid. Simmer, uncovered, until almost all liquid has evaporated. Stir in potato mixture, salt and pepper.
