
French Onion Chicken Casserole

Besides being warm and wonderful on a chilly day, a casserole is fun to make because it all comes together in one pan. This French onion chicken casserole is the perfect example; it uses cream of mushroom soup, French onion dip and a little Dijon mustard to create a tasty sauce for the chicken within it.
Ingredients
- 1 can (10-1/2 ounces) unsalted condensed cream of chicken soup, undiluted
- 3/4 cup French onion dip
- 2 teaspoons Dijon mustard
- 1 to 2 tablespoons sherry, optional
- 5 cups cubed cooked chicken breast
- 1 cup shredded cheddar cheese, divided
- 1 teaspoon minced fresh thyme
- 1 can (2.8 ounces) french-fried onions
Directions
- Preheat oven to 350°. In a large bowl, combine soup, dip, mustard, and if desired, sherry until smooth. Stir in chicken, 1/2 cup cheddar cheese and thyme. Transfer to a greased 2-qt. baking dish. Sprinkle with remaining 1/2 cup cheddar cheese and french-fried onions. Bake, uncovered, until heated through, 25-30 minutes.
