Gluten-Free Peanut Butter Cookies

These gluten-free peanut butter cookies are chewy, salty and sweet. You wouldn’t believe you only need three ingredients to make them.  

Ingredients

  • 1 large egg, room temperature, beaten
  • 1 cup sugar
  • 1 cup creamy peanut butter

Directions

  1. Preheat oven to 350°. In a large bowl, mix all ingredients. Roll level tablespoons of dough into balls. Place on an ungreased baking sheet; flatten with a fork.
  2. Bake until crisp, 12-15 minutes. Remove to a wire rack to cool.
