Ingredients
- 3 pounds Italian sausage links, cut into 3/4-inch slices
- 1 tablespoon butter
- 1 tablespoon olive oil
- 4 medium green peppers, cut into thin strips
- 1 medium onion, thinly sliced and quartered
- 3 tablespoons chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon lemon juice
- 6 plum tomatoes, coarsely chopped
- 1 tablespoon minced fresh parsley
- Hot cooked polenta, optional
Directions
- In a Dutch oven or large skillet, cook the sausage over medium heat until no longer pink; drain and keep warm.
- In the same pan, heat butter and oil over medium heat until butter is melted. Add peppers and onion; cook and stir until slightly softened, 4-6 minutes. Stir in broth, salt, pepper and lemon juice. Cover and simmer until vegetables are crisp-tender, 8-10 minutes, stirring occasionally. Add tomatoes and parsley; heat through. Stir in sausage. If desired, serve with polenta.
