Grilled Lemon Chicken

Grilled lemon chicken is easy to prep ahead, and when you're about ready to eat, all you need to do is fire up the grill. No matter who you're serving, they'll love the citrus in this flavorful main dish.

Ingredients

  • 1/2 cup plus 1 tablespoon lemon juice
  • 6 tablespoons olive oil
  • 3 tablespoons minced fresh parsley
  • 3 tablespoons grated lemon zest
  • 1-1/2 teaspoons minced garlic
  • 3/4 teaspoon salt
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon dried marjoram
  • 3/4 teaspoon pepper
  • 6 boneless skinless chicken breast halves (6 ounces each)

Directions

  1. In a small bowl, combine the first nine ingredients. Pour 1/3 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for up to 1 hour. Cover and refrigerate remaining marinade.
  2. Drain and discard marinade. Grill chicken, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 165°, basting occasionally with reserved marinade.
