Fresh, crunchy and full of texture, this apple salad comes together in just 15 minutes for a quick lunch or the perfect potluck dish.
Ingredients
- 3 cups cubed apples (1/2 inch)
- 2 tablespoons lemon juice
- 1 cup chopped celery
- 1 cup miniature marshmallows
- 2/3 cup fat-free mayonnaise
- 1/2 cup chopped pecans or walnuts
Directions
- In a large bowl, toss apples with lemon juice. Add celery and marshmallows. Stir in mayonnaise.
- Refrigerate, covered, until serving. Stir in pecans before serving.
