Croissant Breakfast Casserole

With buttery croissants, seasoned sausage and shredded Gruyere, this croissant breakfast casserole is everything you could ever want in a breakfast casserole—and more.

Ingredients

  • 8 croissants, chopped into 3-in. pieces
  • 1/2 pound bulk pork sausage
  • 1/2 medium onion, finely chopped
  • 8 large eggs
  • 1-1/2 cups whole milk
  • 1 cup half-and-half cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-1/2 cups shredded Gruyere cheese, divided
  • 2 tablespoons minced chives

Directions

  1. Preheat oven to 350°. Grease a 13x9-in. baking dish; arrange croissant pieces evenly in baking dish.
  2. In a large skillet, cook sausage and onion over medium heat, until sausage is browned, 5-7 minutes. Spoon over croissant pieces.
  3. In a large bowl, whisk together eggs, milk, cream, mustard, poultry seasoning, salt, pepper and 3/4 cup Gruyere. Pour mixture evenly over croissants. Lightly stir to coat. Sprinkle with remaining 3/4 cup Gruyere.
  4. Bake, covered, 25 minutes. Uncover, bake another 25-30 minutes or until egg is set and croissants are browned. Let stand 10 minutes; serve with minced chives.
