Ingredients

  • 2 tablespoons butter, melted
  • 1 tablespoon vegetable oil
  • 2 pounds chicken wings
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • SAUCE:
  • 1/4 cup butter, cubed
  • 1/2 cup Louisiana-style hot sauce
  • 2 teaspoons brown sugar

Directions

  1. Preheat oven to 425°. Line a 15x10x1-in. baking pan with foil or parchment. Pour butter and oil over foil; brush to coat evenly.
  2. Using a sharp knife, cut through the 2 wing joints; discard wing tips. In a large bowl, combine baking powder, salt and garlic powder; add wing pieces, a few at a time, and toss to coat; shake off excess.
  3. Place on prepared baking sheet. Bake until golden brown, 30-35 minutes.
  4. Meanwhile, in a small saucepan, combine sauce ingredients over medium heat. Cook and stir until sugar is dissolved.
  5. Brush wings with half the sauce. Cook until browned and juices run clear, 8-10 minutes longer. Brush with remaining sauce.

Coating the wings with baking powder helps crisp them up in the oven. Use baking powder, not baking soda, for the best results. These are doused in Buffalo sauce, but could also be brushed with your favorite barbecue sauce instead. —Taste of Home Test Kitchen
