These cranberry almond balls are chewy and nutty, sweet and a bit savory. Whip up a batch of these no-bake energy bites to keep in the pantry for breakfast, snack time or dessert.
Ingredients
- 1 cup oven-roasted sliced almonds
- 10 pitted dates (about 2 ounces)
- 1 cup dried cranberries
- 1/2 cup old-fashioned oats
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1/4 teaspoon salt
- 1/4 teaspoon almond extract, optional
Directions
- Place almonds in a food processor; pulse until finely chopped. Add dates, cranberries, oats, almond butter, honey, salt and almond extract, if desired. Pulse until mixture is well-combined and sticky. Shape or scoop into 1-1/2-in. balls. Store in between sheets of parchment paper in an airtight container.
