Cornbread Fritters

Imagine cornbread, but in a fried and fun-sized form. Our cornbread fritters recipe is a delightfully fun and delicious treat that whips up in less than 30 minutes. Buttermilk and a hint of sugar make them even more scrumptious.

Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg, beaten
  • Oil for deep-fat frying

Directions

  1. In a large bowl, stir together cornmeal, flour, sugar, baking powder and salt. Whisk in buttermilk and egg until combined.
  2. In a deep-fat fryer or skillet, heat 2-in. oil to 375°. Drop batter by tablespoonfuls into skillet. Fry until golden brown, about 2 minutes on each side. Drain on paper towels; keep warm.
