Imagine cornbread, but in a fried and fun-sized form. Our cornbread fritters recipe is a delightfully fun and delicious treat that whips up in less than 30 minutes. Buttermilk and a hint of sugar make them even more scrumptious.
Ingredients
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup buttermilk
- 1 large egg, beaten
- Oil for deep-fat frying
Directions
- In a large bowl, stir together cornmeal, flour, sugar, baking powder and salt. Whisk in buttermilk and egg until combined.
- In a deep-fat fryer or skillet, heat 2-in. oil to 375°. Drop batter by tablespoonfuls into skillet. Fry until golden brown, about 2 minutes on each side. Drain on paper towels; keep warm.
