Ingredients
- 8 cups torn romaine
- 2 plum tomatoes, sliced
- 1 cup pitted ripe olives
- 1 cup Caesar salad croutons
- 1/2 medium red onion, cut into rings
- 1/2 cup shredded Parmesan cheese
- 1 small carrot, shredded
- 8 to 10 pepperoncini
- DRESSING:
- 2/3 cup olive oil
- 2 tablespoons water
- 3 tablespoons white vinegar
- 2 tablespoons mayonnaise
- 1 envelope zesty Italian salad dressing mix
- 2 teaspoons Dijon mustard
- 1/2 teaspoon sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon cracked black pepper
Directions
- In a salad bowl, combine the first 8 ingredients. Whisk the dressing ingredients. Pour over salad and toss to coat. If desired, top with additional shredded Parmesan cheese and cracked black pepper. Serve immediately.
