Coconut Mojito

Kick off summer with this fun coconut mojito recipe. Fresh, zesty and a little creamy, this tasty tipple brings the tropics to you, no plane tickets needed.

Ingredients

  • 1 lime wedge
  • 1 teaspoon sugar
  • 1 cup ice cubes
  • 2 mint sprigs
  • 2 ounces coconut rum
  • 1 ounce light rum
  • 1 ounce cream of coconut
  • 1 ounce lime juice
  • 1/4 to 1/2 cup club soda

Directions

  1. Squeeze lime wedge into a highball glass; drop lime into the glass. Add sugar; muddle. Add ice. Gently press mint or slap mint; add to glass. Pour rum, cream of coconut, lime juice and club soda into glass; stir. If desired, garnish with additional lime.
