
Cilantro-Lime Chicken

A bright cilantro-lime chicken marinade soaks bone-in chicken thighs in flavor before they're slow-cooked till they're fall-apart tender.
Ingredients
- 2 teaspoons chili powder
- 1 teaspoon sea salt
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 6 bone-in chicken thighs (about 2-1/4 pounds)
- 1/3 cup lime juice (about 3 limes)
- 1 tablespoon olive oil
- 1/2 cup fresh cilantro leaves
- 5 garlic cloves, halved
Directions
- Combine the first 5 ingredients; rub over chicken. Place in a 4- or 5-qt. slow cooker. Combine remaining ingredients in a blender; cover and process until pureed. Pour over chicken.
- Cook, covered, on low until a thermometer inserted in chicken reads 170°-175°, 3-4 hours.
