Cheesecake Balls

Yield about 1-1/2 dozen
These no-bake cheesecake balls are a creamy, bite-sized treat with a sweet graham cracker crunch that could not be easier to whip up.

Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup graham cracker crumbs, divided

Directions

  1. In a large bowl, beat cream cheese at medium speed until smooth, 3-4 minutes. Slowly beat in confectioners' sugar and vanilla until fluffy, 2-3 minutes. Beat in half of the graham cracker crumbs until incorporated. Scoop into 1-1/2-in. balls. Cover; freeze 30 minutes.
  2. Place remaining graham cracker crumbs in a small dish. Roll balls in graham crackers; place in a resealable container or dish. Cover; refrigerate at least 4 hours or overnight. Store in an airtight container in the refrigerator.
