Ingredients
- 3 large pasteurized egg yolks
- 2 garlic cloves
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 1 tablespoon anchovy paste
- 2 teaspoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- Dash hot pepper sauce, optional
- 1/2 cup olive oil
- 1/4 cup grated Parmesan cheese
- SALAD:
- 2 large bunches romaine, chopped
- 1 cup salad croutons
- 1/4 cup shaved Parmesan cheese
Directions
- Place first 9 ingredients in a blender; cover and process until smooth. If desired, add hot sauce. While processing, gradually add oil in a steady stream. Stir in Parmesan cheese. Chill until serving.
- Place romaine into large salad bowl. Drizzle with dressing; toss to coat. Sprinkle with croutons and parmesan.
