Ingredients
- 1 pound uncooked penne pasta
- 1-1/2 pounds boneless skinless chicken breasts, cut into 1/2-in. pieces
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1 cup ranch salad dressing
- 1/2 cup sour cream
- 3/4 cup Buffalo wing sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup crumbled blue cheese
- Optional: Sliced green onions
Directions
- Preheat oven to 350°. Cook pasta according to package directions; drain, set aside.
- Meanwhile, sprinkle chicken with garlic powder, salt and pepper. In a large skillet, cook chicken in oil until no longer pink, 5-7 minutes. Remove from heat, stir in cooked pasta.
- In a small bowl, combine ranch dressing, sour cream and buffalo sauce. Pour sauce over chicken and pasta mixture; toss to coat. Transfer to a greased 13x9-in. baking dish. Sprinkle with mozzarella and blue cheese.
- Bake, covered, 25-30 minutes or until heated through. Uncover; cook until cheese is browned, about 5 minutes longer. Let stand 5 minutes before serving. If desired, garnish with green onions.
