Oatmeal Pancakes

These oatmeal pancakes contain all the joy of a morning pancake stack while also including wholesome ingredients like oats and whole-wheat flour.

Ingredients

  • 1/2 cup plus 2 tablespoons quick-cooking oats
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup packed brown sugar
  • 1 large egg
  • 2 tablespoons canola oil
  • 1 cup buttermilk

Directions

  1. In a small bowl, combine the oats, flours, baking soda, salt and brown sugar. In another small bowl, beat the egg, oil and buttermilk. Stir into dry ingredients just until moistened.
  2. Pour batter by 1/3 cupfuls onto a large greased cast-iron skillet or griddle over medium heat. Turn when bubbles form on top; cook until the second side is golden brown.

My family absolutely loves these oat pancakes. I make them every Saturday and Sunday. If I don't, they don't believe it's the weekend!
