An ice-cold blueberry mojito is the perfect way to beat the heat this summer, whether you're pitmaster or sitting poolside.
Ingredients
- 8 fresh blueberries
- 8 fresh mint leaves
- 1 cup ice cubes
- 2 ounces white rum
- 2 tablespoons fresh lime juice
- 1 tablespoon simple syrup
- 4 ounces club soda, chilled
- Optional: Lime slice, mint sprig and additional fresh blueberries
Directions
- Add blueberries and mint leaves to a tall glass; muddle with the back of a wooden spoon. Fill the glass with ice cubes; add rum, lime juice and simple syrup. Top glass with club soda; mix well. If desired, garnish with lime slice, mint and blueberries.

Blueberry and lime are two of my favorite flavors, so I added blueberries to my favorite mixed drink! This recipe can easily be doubled or tripled. To make simple syrup, combine 1/2 cup sugar and 1/2 cup water and cook over medium heat until the sugar is dissolved.
