Bison Burgers

These bison burgers have all the flavor of your typical ground beef burger, but they're lighter and leaner. This recipe tops juicy ground bison with caramelized onions and melted Swiss cheese.

Ingredients

  • CARAMELIZED ONIONS:
  • 2 tablespoons butter
  • 2 medium yellow onions, thinly sliced
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • BURGERS:
  • 1 pound ground bison
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon canola oil
  • 4 slices Swiss cheese
  • 4 sesame seed hamburger buns, split
  • 1 cup fresh arugula
  • 2 tablespoons mayonnaise

Directions

  1. Melt butter in a large skillet over medium-low heat. Add onions; cook until tender, 20-25 minutes, stirring occasionally. Stir in vinegar, salt and pepper; continue cooking until onions are golden brown and very soft, 15-20 minutes.
  2. In a large bowl, combine ground bison, mustard, salt, garlic powder, onion powder and cayenne; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties.
  3. In a large nonstick skillet, cook burgers over medium heat until a thermometer reads 160°, 3-4 minutes on each side. During the last 1-2 minutes of cooking, place a slice of cheese on top of each patty; covering allowing cheese to melt.
  4. Serve burgers on sesame seed buns with caramelized onions, arugula and mayonnaise.
