Beet greens are the leafy tops of red or golden beetroots, and they’re totally edible! Enjoy these garlicky sauteed beet greens as a side, on a sandwich, or in pasta and grain bowls.
Ingredients
- 1 tablespoon olive oil
- 1 pound beet greens, roughly chopped
- 2 garlic cloves, minced
- Salt and pepper, to taste
- Crushed red pepper flakes, optional
Directions
- Heat olive oil in a large skillet over medium heat. Once oil shimmers, add beet greens, garlic, salt, pepper and crushed red pepper flakes, if desired. Use tongs to toss the beet greens as they cook, until they start to wilt, 7-8 minutes. Drain any excess liquids. Serve immediately.
