Bacon-Wrapped Scallops

Ingredients

  • 8 bacon strips
  • 16 sea scallops (about 2 pounds), side muscles removed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons olive oil
  • Chopped fresh parsley
  • Seafood cocktail sauce, optional

Directions

  1. Place bacon in a large nonstick skillet. Cook over medium heat, until partially cooked but not crisp. Remove to paper towels to drain. Cut bacon strips lengthwise in half.
  2. Wrap a halved bacon strip around each scallop; secure with a toothpick. Sprinkle with salt and pepper.
  3. Wipe skillet clean if necessary. Add oil; heat over medium-high heat. In batches, add scallops; cook 3-4 minutes on each side or until scallops are firm and opaque. Discard toothpicks. Sprinkle with parsley; if desired, top with additional salt and pepper. Serve with seafood cocktail sauce if desired..
