Smash Cake

If your baby's first birthday is around the corner, this high chair tray delicacy, aka the smash cake, is going to be a must-have for the momentous occasion.

Ingredients

  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs, room temperature
  • 3/4 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup 2% milk
  • FROSTING:
  • 1/2 cup butter, softened
  • 2-1/2 cups confectioners' sugar
  • 1/4 teaspoon vanilla extract
  • 2 to 3 tablespoons 2% milk
  • Sprinkles of your choice

Directions

  1. Preheat oven to 350°. Line bottoms of 2 greased and floured 6-in. round baking pans with parchment. In a small bowl, cream butter and sugar until crumbly. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition.
  2. Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool in pans 10 minutes before removing to a wire rack; remove paper. Cool completely.
  3. For frosting, in a small bowl, beat butter and confectioners' sugar until fluffy. Add vanilla and milk; beat until smooth. Spread frosting between layers and over top and sides of cake. Decorate as desired. Store in the refrigerator.
