Apple Matchstick Salad

Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons fresh lemon juice
  • 1/8 teaspoon salt
  • 4 medium apples, julienned
  • 3/4 cup chopped pecans, toasted
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup dried cranberries
  • 1/4 cup golden raisins

Directions

  1. In a large bowl, whisk together olive oil, lemon juice and salt. Stir in remaining ingredients.
