Apple Maple Pecan Salad

Ingredients

  • 1/4 cup lemon juice
  • 1/4 cup canola oil
  • 1/4 cup maple syrup
  • 1-1/2 teaspoons Dijon mustard
  • 1/2 teaspoon coarsely ground pepper
  • 4 cups shredded cabbage
  • 3 large Granny Smith apples, julienned
  • 1/2 cup crumbled Gorgonzola cheese
  • 1 cup chopped pecans, toasted

Directions

  1. In a small bowl, whisk first 5 ingredients until blended. Combine cabbage, apples and cheese in a large bowl; toss with dressing to coat. Let stand 30 minutes before serving. Sprinkle with pecans.
