Anniversary Chicken

Total Time Prep/Total Time: 30 min.
Yield 4 servings
Anniversary chicken feels fancy, but has only seven ingredients (most of which are likely already in your pantry) and takes just minutes to assemble.

Ingredients

  • 1/4 cup all-purpose flour
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1 tablespoon canola oil
  • 4 teaspoons teriyaki sauce
  • 1/2 cup ranch salad dressing
  • 1 cup shredded cheddar cheese
  • 1/4 cup bacon bits
  • 2 green onions, sliced

Directions

  1. Preheat oven to 375°. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess. In a large skillet, heat oil over medium-high heat. Brown chicken on both sides; transfer to a greased 13x9-in. baking dish.
  2. Brush teriyaki sauce over chicken. Top with ranch dressing, cheese, bacon bits and green onions. Bake, uncovered, until a thermometer reads 165°, 15-17 minutes.

Everyone I've shared this recipe with raves about it—it's definitely a "keeper." The ingredients are easy to play around with, too. I've tried it with several variations, like using Spanish onion and different cheeses (I like using white cheddar and mozzarella).
